It even crashed submitting a bug report.
Windowed/borderless fullscreen shouldn't make a difference unless there is a driver issue.
I have not experienced any crashes in the two weeks since I installed it, but about 3 days ago it started crashing multiple times a day.
Could this be due to updating my GeForce drivers to the latest version after not updating them for several months?
You'd think that, but there is in fact a known, but fortunately fairly uncommon, issue in gaming generally where the graphics settings of a game (particularly the screen pixel height/width and refresh rate) can randomly become mismatched from the actual settings of your screen to where it'll either completely prevent the game from running or it'll allow the game to run for maybe a minute or so and then the game will simply freeze and crash.
For some reason this mismatch seems to occur more often when games are run in windowed or fullscreen-windowed mode; it's also possible that quickly switching between display modes and non-native screen resolutions can cause the issue to happen as well.
Fortunately there are two known solutions to the issue:
1: If possible, switch to fullscreen mode using the in-game settings menu.
2: Alternatively, if you can't get the game to run, or to run for long enough to get into the in-game settings, then (depending on the game) a simple edit either to the games settings.ini file OR to one or more of the games registry keys is usually enough to resolve the mismatch and get things working again.
I could be wrong, but from memory I think this game runs by default in fullscreen-windowed mode. At the very least it's worth checking in the games graphics settings just to be sure.
Also, are you running the game on the dev. branch version (v1.407) or the main branch version (v1.406) ?
Beyond that though, what are the basic specs of both of your computers?

* Did the crashing issue start immediately after you updated the driver, or did it start having issues before that moment?

I am running the main branch, and my issues started with windows update KB5050092
After this update there were constant crashes in not only this game, but a few others.
I have since rolled back that update and the issues went away.
That's oddly specific, and kinda strange, because at first glance there doesn't seem to be anything obvious in the notes for that particular update that would cause games/apps to crash so consistently; but if rolling back that update appears to have resolved the issue then I'm happy for you :D
