this keep happening and before this happens, the sound suddenly stops and the screen freezes for seconds.

Try downloading one outside Steam to see if there's any changes. They're not the same file structure. It won't solve anything but that's just my suggestion but if it did that'd be a miracle.
Come back again when that time ever comes just for a mere sign. You can have an anti-virus do its work for you for any malicious code to begin with too or just trust.

In all seriousness; when playing indie games like that, they tend to execute in "user mode" - they don't require any special low-level system privileges, so they launch directly. It's become increasingly uncommon for games to need some special installer that requires Admin privileges (hence the UAC prompt).
If you install an anti-virus or even a registry cleaner or a video editor, they'll notify you still with UAC that this app will make changes to your computer (NOT ASKING for admin privileges) because that's what those programs are designed to do. To edit, create, and delete files. The game has a built in uninstaller too and that's part of that notification which will indeed make changes to your system. Other games mentioned here doesn't have a pre-built installer and uses Steam's default uninstaller button to do it or the windows add or remove program instead of an uninstall.exe.
What are you talking about digital signature? These are all just installation information that they didn't put in much and verified by Microsoft as of yet.
Those are in fact two different things and you're changing the narrative like the game is malicious when it already passed Steam's audit before coming to store.

The signature, given in the UAC prompt, is basically a record of who wrote the program/installer, that's hard to fake (they tend not to approve signatures like "REAL MicroSoft"). It's common to see "Unknown" for such a prompt if it's, say, a registry cleaning tool written by an independent engineer with no notoriety, and it's up to whoever's running it whether they want to trust it.
On the topic of the uninstaller: In this game's case, that's written by Valve. Since we trust Valve, we can safely assume it's only doing proper scripted cleanup like removing start menu entries, or the Add/Remove Programs entry.
Not accusing the game of being malicious, but it's also a matter of not trusting people with your life when you've just met them; basic web precaution.
