What do you think is better for killing bosses?

Depends on the weapon and depends on what you focus on. Both are viable as far as i'm aware. However. stealth can be difficult on fast moving bosses.

I remember the deep sea dumbbells being op when using the stealth strike, especially on The Devourer of Gods, dealing a 1/3 of its hp if you get a good angle.
