For example, your world may select Cobalt, Palladium, and Titanium as its hardmode ores.
The first time you break an altar, the game spawns ore from the first tier. The second time you break an altar, the game spawns ore from the second tier. The third time, the game spawns ore from the third tier. By the fourth, it wraps back around to the first tier and so on.
Keep in mind that each time you do this, it will also spawn random corrupted blocks that will spread one of the various evil biomes. I'd say that if you are playing with less than four people, then breaking a total of six to nine altars will provide a sufficient amount of ore such that it is easy enough to find.
When you beat your first mechanical boss, Mythril and Orichalcum (both!) spawn. It does not matter which boss.
When you beat your second mechanical boss, Adamantine and Titanium (both!) spawn. It does not matter which, as long as it's not the first one you beat.
When you beat the final mechanical boss, Hallowed ore spawns.
Destroying altars does not spawn more, it only gives you souls of night (and not always). There's no point in destroying them.
