me and my friend are stuck on the infinite 'sending player data' loading screen. does anyone know a fix?

I've seen so many posts about this issue and none of the solutions I've read have worked for me and my friends.
We had the same mods installed, and whatever else you could think of.

However it came down to some items breaking coop connectivity if those were equipped or only in one's inventory.
The item that caused us our problems was 'frozen wings'.
What I suggest you do is try and have one of the guys put the entirety of his inventory in a chest and try and join, if that works - cool. Take half the chest and try again, until you eventually figure out what causing this issue.
