For some reason the camera keeps nudging when looking around, sometimes as strongly as flipping me 180. Mouse acce. is OFF but it feels like it's still on and causing my camera to nudge 180 even in the smallest movements.

Do you have stable FPS when playing? Monitor your FPS when its happening as a spike will cause this. Also, check you have no controllers plugged in too.

No fix as of yet, I went through every possible road to see if I can get some results but all for nothing. My controller was unplugged at the time so that's not it, I locked my FPS all the way down to 60 as soon as I found the issue, thinking this might be the case, but this did not fix it either. I ended up having to play the game with controller as this issue persist through all possible fixes I could think of.
