Is there a point to turning off the flashlight?
Does it give the antagonist more struggle ton find you? Is there a strat with this?

Yes if you are not exactly on the pattern of the path that Azazel will do and you haven't yet been spotted, turning off the flashlight and crouching, increases your chances of not being seen and caught.

you hide in the shadows with the flashlight off and molly, anna or zara may not or less likely to see you.

Their doesn't seem any definitive answers to this, because I've been told it's purely line of sight based and flashlight means nothing. We've literally UV stunned someone accidentally as they ran by and they kept going ignoring us.

This speech is valid if you are in front of Azazel in a group, the monster has been developed so that when is in front of a group of players it looks on a random one.
When a player becomes the target, you can stay close to Azazel that you won't be captured, except if you are exactly along the line of path between Azazel and the target, in that case the demon doesn't make any distinction and another player can be captured avoiding the target capture.
If a player is alone and is near Azazel, it is better to turn off the flashlight, because this would attract his attention and he would automatically become a target.
Then there is one last parameter, which is very low in value, staying at a certain distance from Azazel can automatically be a way to make the demon lose track, tactic used during the red-eye stun, as soon as the player stuns Azazel and before the red eyes are activated, if the player moves away moderately to a certain distance even with the flashlight on, the demon may decide to move away by choosing a new path pattern (it goes by luck, if the pattern is in the direction in which you run, better to keep running or hide); this aspect of the game can be easily noticed and reproduced in the farm yard.

Can you back up any of that information because this forum is loaded with random information that is wrong.

And what I was saying is that my friends and I accidentally UV lighted Kara when she was patrolling but didn't stop patrolling when we did that, she kept running despite reacting to the stun. Wasn't even locked onto anyone.

Seems like Phasmo forums all over again. Light/noise attracting the ghost was only a very recent addition to that game, but I had remembered people swearing it was a thing when the game just entered early access. Just a game of telephone of people hearing something the dev said they planned on adding at some point.
