Sophia is a liar with anger issues, and it takes you saving her life two times for her to actually trust you. Octavia is controlling and arrogant, and no matter how devoted to her you are she'll still become a La-Tari and leave the world.
In a Rebel Priest playthrough, I like to imagine that the New Faith abolishes clerical celibacy so Sir Brante and Jeanne can marry.
Regardless, of all 3 female characters, Jeanne has the fewest flaws, and I'd consider the rebel priest as the best path with Jeanne.

Jeanne was raised in the faith and is adamant that the traditional way of doing things is the only real way to do things, but she can be converted to the New Faith, given time and some good choices. The relationship between Brante and Jeanne is also forbidden since the two of them had taken vows so working with that can be complicated.
Sophia has suffered so much in her life that she has become incapable of trusting others without good cause, such as saving her life a couple times and helping her hold on to hope that not everything in the world is bad. Her cynicism and jaded world view serves her well but also makes it extremely difficult to have a healthy relationship with her.
Octavia is an Arknian, and the daughter of a very prominent one. She has grown disillusioned with the order of things and wishes to explore new paths. She is spoiled, selfish, and has absolutely no reason to believe that people shouldn't prostrate themselves before her because that is just how society functions. She is rebelling against the system in her own way, however, and she does find a viable alternative to the Lots.
All three are relationships that are complex, grounded in the way the world works and makes for some great role play decisions for players to decide for their Brante.
