you can always look for a roll back old version at SteamDB

https://steamdb.info/app/1259420/history/ if you know how to roll back the game here's the steamdb history for the game

Why would you use mods in this game?

There are numerous mods that add in cut weapons, make weapons available to purchase earlier, they modify existing skills to fix inconsistencies and crappy features. There are hundreds of reskins that allow Deacon to wear different outfits even in cutscenes. Additional ammo capacity and new weapon rebalances. There are mods that make it more of a survival game and modifications to the difficulty to make it harder.

Plenty of reasons.

If you put Steam in offline mode you can launch the executable without doing the update.

You can use this guide from another recent game:

https://steamcommunity.com/app/2680010/discussions/0/595144651000792022/

Just need to change the data for Days Gone using the previous patch from 1st Dec 2022:

App ID: 1259420
Depot ID (Multi Region): 1259421
Depot ID (only Japan Region): 1259422
Manifest ID (Multi Region): 2120063653185364239
Manifest ID (Japan Region): 793700435581444608

Example at Steam console for Multi Region:
download_depot 1259420 1259421 2120063653185364239

The rest you can follow that other thread instructions. Remember to change auto updates for the game to "wait until i launch" and done.

Note: this is valid for playing with Steam in offline mode. If you want to be online anyway, you can move all downloaded files from the console to a new folder called, for instance, "Days Gone2" of whatever, just a different name from the normal folder that it is "Days Gone". In this case you would need to keep both versions at your computer. Let the new version update and ignore it, and launch the game from the previous version folder (BendGame\Binaries\Win64|Days Gone.exe)

Note 2: if for some reason you can't run the game from the previous folder and Steam runs the new version anyway, you will have to delete all content from the Days Gone (new version folder) once updated, copy there all the previous version files and then start the game from the exe directly as i said. And keep a copy of the older version files separated because if the game has a new update, it will try to do it again over the older version files. Let it run and then copy all the older files again at the default folder.

I hope this helps, sorry if seems a bit complicated, it's easier than what it seems!

Game generated news sfpaks folder after the update. You have to delete your old sfpakss folder (if you renamed sfpaks to sfpakss) and rename new sfpaks to f.e. sfpakss and mods will work.

Is there a guide for how to do this please? And how would we stop Steam from updating it again? I would really like to revert to how the game was prior to this 'remaster'.

New Sfpaks folder rename to sfpakss. Game generated new folder after the update and mods will not work without renaming it. My mods didn't work when i launched the game but when i renamed this folder sfpaks to sfpakss like it was before mods are working again.
