How many cloning labs
How many cloning labs you guys usually build, is 1 enough to finish the game?

I went with 2, and a spare one to check which unused genomes I have available.

Actually, yes you can. I just finished my own playthrough with only one cloning lab. though you can have more, I have found the relative complexity of bait vs genetic splicing choices to reward having less cloning labs and focusing instead on more long-living clones. It can be a bit tricky at first when your clones dont last vary long, but it will become a breeze once you get their lifespans up over 1 month.
I went with one lab for the whole game and, like the guy above, focused on high quality long-living clones, and improving their longevity. It did hinder my growth, because I had to wait to slowly build population vs having multiple cloning labs, but I preferred slower, managed growth than the alternative.

The problem with using multiple clone labs and rapidly expanding your population is that you struggle to build enough support infrastructure to support them, and you end up with a ton of unemployed pops. You also tend to have lower quality clones and have to deal with abnormalities and a rapidly cycling population.

I think most people go with 2, but any more than that is asking for a lot of trouble. It's basically a personal preference, would you rather spend time building population to support your infrastructure or spend time building infrastructure to support your population growth?
