If you got the spare $ I'd say sure, dive into F22. It will keep you plenty busy until FS25 goes on sale and is by that time mostly bug-less. Of course if you like it and get into it, you'l prob want the latest and greatest. So if you can only get 1 might as well wait.
The number of tutorials, play-through, role play, challenges, reviews on YouTube alone is staggering for this crazy little niche game.

FS22 it's out fro ma while and have tons of contents, with dlc and mods.
FS25 will be a new game and wil take some times before it goes on track with the same amount of contents, but it's new.
And being you a new player depend on how strong it's the feel to play it.
Go for the consolidated FS22 now, or wait for the new, but somehow at first lesser new FS25?
Price wise, you can get the complete FS22 Premium Edition for less of the base FS25.
