I want to Delete Pig Food Stocks
I have accidentally dumped all my potatoes into my pig farm food drop off point before I realised that they only contribute 5% to the health mix. Now I can't add any different foodstuffs until they eat most of them. Can someone tell me if there is an xml file that I can edit to remove the potatoes and create room for the other staples? It's calmsden farm so a built-in pig area.

I did the same thing. They will eat the potatoes, just very slowly, and will not gain health or productivity from them.
If you are still near the start of your playthrough, you can just wait it out - with pigs, age is the most important factor. You can feed them nothing for 2 years, then give them pig food and they are back at 100% and max value.
Personally, I delete the pigs and plow the field - hate to think what the pigs did, to give that awful mottled effect....
If you want to keep it, it is a simple pig pasture, so you may be able to delete it and replace it.

There will be a simple xml edit also, but don't have the location of it, sorry.

Hi, same mistake here. Dumb us... :-) I did not want to delete the barn. But as Leezer suggested, you can fix it manually (its like cheating, but I trust, that you will do the right thing):

1) Save your game and Exit
2) open the file on your drive by just copying this string into your Windows Explorer: C:\Users\%USERNAME%\Documents\My Games\FarmingSimulator2022\savegame1\placeables.xml
3) Look for the section with your husbandry
4) Adjust the "fillLevel" of SUGARBEET or POTATOES

For me it looks something like this:
