How does coop work?
My understanding is that the game has coop, and I'm imagining that one person will host and progress will be made on their game, but what about the guests?
Do payouts to the host, duplicate to the guests that they can use in their single player game like in Snowrunner? Can the host give money to the guests to pay for their help? (which they can use in their single player game?)
Or, do they just spend time helping out and get nothing in return?

No so interested in farming, but the mining that I've seen in videos would appeal to me and a few of my friends.

If you're a guest on someone else's farm then you just help out at the host's farm while you're there. If you're the host of the game then other people can join you're farm and help you with your farm.

But to be clear, they don't actually gain anything from helping you?

it's more like a roleplay thing.. They help you on the farm, you can put them to work, or they can start a own farm on the server map.
and it's like 2 neighbours helping each other out.

or one is milkfarm the other is a contractor

Guests can make their own farm and do their own thing, and when you or they need help or something done, you can give each other contractors status to work on the land and use each others vehicles. After the "job" you can give that farm money and vice versa as payment.

Thats about the only way to do what you described and is a decent system.

The only problem with building a farm on someone else's map as a guest is that you'll only be able to access it when the host has their map up online unless it's a dedicated server. And the host could delete your farm if they want to or if the host doesn't want to play Farm simulator anymore you won't get to play on the farm you built anymore.
