I suggest you take a look at some map reviews on YT.
However I enjoyed "The Western Wilds" by ALiEN JiM, It has no field owners, as such has no contracts.
All the plots for sale have no fields and you will have to make your own.

I've not played this map or his other no mans land, as I tend to play UK style maps. However I'm thinking of trying one, and got 3 to pick from that I know of.

Which one would you recommend and why?
If you want a map with some existing 'infrastructure' then look at Elk Mountain. I personally like it not only for the play options, but also for the topography. You can set up some interesting logging and mining operations.
Not so say maps like Western Wilds and NML dont have a draw and I play them as well, but the focus is a bit different on those maps if just in the freedom you have to lay out your farm anyway you want with no limitations due to the topography.
