What happens if you don't empty slurry and manure from your pig pen?
Do you just lose the additional production when full? Do the pigs stop breeding? What is the best thing to do with manure and slurry?

You just don't get more until you empty some out. You can spread it on fields but it's a bit of a pain or you can sell it to a BGA.

Not sure with pigs, but with cows their productivity does fall, and they give less milk.
If you're using Precision Farming, then you will never generate enough manure or slurry for more than one decent-sized field, which kind of defeats the purpose.
Simplest solution is just to delete the manure heap when full, and replace - it's not worth the expense of selling it. Same with slurry, if you invest in an slurry expansion pit - delete when full and replace.

I'm not sure, but I think your pigs might not reproduce anymore or there might be another penalty. It's definitely best to use it up in some way and not just delete pit. I offer some vanilla game options below:

First option is to use it up as a replacement for fertilizer. It's free after all. Granted - you need alot of it to fertilize any fields, but any free fertilizer will save you money on the long run. I suggest to use it up, when it's close to full. The only investment for that can be a manure spreader and slurry tank with spreader (you can buy or rent one)

Another option (not on all maps) is to find a sell point and sell it there. The income is very low, but any income from free source sounds good if you ask me. The investment there is a trailer (for manure) and a slurry tank. Again - buy or rent one.

For a serious long-time operation of manure and slurry the best option is to buy an BGA (be carefull - that is a really big investment), and drive your manure and slurry there and convert it into electricity and methane. The income is not great, but much better then just selling it into a sell point. Additionally with your BGA you can deliver your extra silage (cut grass and store in your silo to ferment) for much more income from electricity and methane. From all that you will produce a by-product called digestate, which is very similar fertilizer to slurry. The BGA digestate pit is extremely big, so you can just store it longer and then use up as a secondary free fertilizer option.

PS: I do not recommend selling sugar beet cuts into your BGA. That is much better served to use in Sugar Mill to produce sugar and sell that. Or top option with huge investing beforehand - to use all that suger further in production to make chocolate (you need cows and milk for that too) or cake (you need chickens for eggs, greenhouse with strawberries and cows for milk and dairy to make butter from milk).

With mods, there is even more possibilities (different productions to use manure and slurry, sell points or even use government drain to just dump it away)
