Another setting to look at is 'auto-head-tracking' which is should be turned off unless you're using VR. That setting is in the second option in the left side nav.
I don't have the game on in front of me so all this is from memory so please forgive any incorrect names etc.

FFB (Force feedback) in FS tends to be insanely strong when set to higher values (though not as bad as in FS19). Thus, "1" delivers the smoothest experience, while "5" can already be very rough.
No kid I'm not missing any brain cells and that setup was exactly what my G29 Heavy Equipment Bundle required for both Mac AND PC to get rid of camera and vehicle drift. I assumed "wont smoth out" meant camera and/or vehicle drifting because it's quite hard to steer with that happening.
Not sure why you'd respond to a post to help other players and then call all of us bozos. But I guess that's "you doing you".

If the (vehicle) drifts without input from the steering wheel (from my experience) it has to do with the deadzone setting. A setting of 0 means there is absolutely no margin in the device's input. So if the wheel is not perfectly calibrated, which I would assume none are from the factory, then setting deadzone to any setting greater than 0 removes the ability for the (vehicle) to turn or "drift" on its own thereby allowing the vehicle to move in a straight line unless receiving input from the wheel/you, in this case after you've turn it at least 1% or whatever setting you like. Might be 20% for you. No idea.
And yes, I am a funny guy. And a nice guy willing to help others if/when I can. You should have assumed that first versus that I'm missing brain cells or a bozo.
