They're both pretty labor intensive, but I find the beets to be easier to work with. You just get SOOOO MUCH sugarcane. :)

Sugarbeets have a lower cost to entry imho (you can use the planters for other crops)

Ye go for beets, much easier to handle and harvest. Go for the biggest harvester - it's gonna take hours anyway.
And be aware that the sugar mill has a limited capacity, c. 280k iirc - a large field will fill that easily, and then you're stuck storing them - most silos won't take them, but some modded ones will. A free option is always the railway silos, if your map has trains - can use as free storage, and will take beets.
The sugar mill also takes cut beets - couple ways to do that: there are modded beet trailers which will cut as they unload; or there is a cheap production mod which will cut them and distribute to the mill.
Also - invest in a truck and the biggest semi-trailer you can find. Good luck.

Stored my beets in the train station silo once i filled the Sugar Mill. Just planted Sugar Cane so not harvested it yet but looks like its going to take a while.
