Essentially, you'll always be doing more damage with it active than without, even if the opponent is resistant.
In Godrick's case, his holy damage negation is only 40%, so sacred blade's added damage is still quite sizeable.
I killed Elden Beast with Cipher Pata, holy resistance be damned.
Another thing to note is that Sacred Blade does not scale, so it's disproportionately strong in the early game and falls off later on. I can't see the exact numbers on your weapon, but I wouldn't be surprised if it was something like a +25% damage buff on the weapon. And because of how the defense formulas work, it's a lot stronger on a weapon already doing holy damage.
Now if you want to experience a trully ballbusting and miserable boss fight try to kill the rotten crystallian trio only with glinstone pebbles......Hell im sure the uchigatana you used for Godrick will make them laugh at you.
