I switched my desktop (! not the game) back to my native 1080p for a specific pixel game because it looked better and forgot about it after that. When I launched Kingdom Come I had the same issue you describe, for me it was so bad I couldn't read the settings menu so had to find and edit the settings file but if you can somewhat make out the menu (or find a video of it to see where the options are and then you can switch to Fullscreen by "feel"). Alternatively switch to a higher resolution on your desktop and you should see everything in the game window to make your fixes.
In my case the "game window" was taking up exactly one quarter of my screen in the lower right portion, a dead giveaway that this is some 1080 vs 4k conflict. Depending on what your issue looks like you can probably reconstruct what it is.
Multi-monitor could also factor into it now that I think of it, you could try disconnecting one until you fix it but I didn't have to.

there you find a elden ring folder open it there is a config xml file delete it, check if this fix the issue, if not you need to check the gpu driver settings for the game.
To disable the DSR option at a NVIDIA GPU, right-click your desktop and select "NVIDIA Control Panel". Go to "3D Settings" and find the "DSR - Factors" option. Un-select all possible settings and confirm
