Has there ever been a "try jumping off this cliff" spot that actually had a secret?
In any of these games.
Specifically, a cliff or such that looks like instant death with no indication of a secret (other than messages)?

Yes.

In ER, one of the quickest ones you can find is in Stormveil Castle where you can jump down to a collapsible ledge that otherwise seems to lead nowhere. When it collapses, there's an AoW scarab, a +2 Somber Smithing Stone, and a Cruciable Knight that grants an incantation upon defeat. Also activates an elevator for quick access.

I guess that one counts but there are a bunch of hints for it. More curious about a random bit of skybox vindicating all the troll messages.

Also in hidden path to the haligtree dungeon with the invisible floors, and the invisible bridge in mountaintop.

99.9% are just troll messages, though.

Well there were two invisible pathes somewhere. I kinda think that counts.

ds1 had an npc straight up tell you to jump off a cliff
she also said... that land was peacful its inhabitants kind
so the trolling was still there

Not exactly what you're talking about, but in the same vain, when Patches tells you to get eaten by an Iron Virgin and you'll be yeeted to Altus Plateau. Technically he's right, but you have to die to get it right.

Divine tower in Caelid: the proper way to explore and descend it, is to do a leap of faith on a bridge that collapse on contact.

In DS3, in the city of Irithyll, you can step off a broken ledge and walk on air then eventually drop down to a lower tower and meet Yorshka. I'm not sure how people even discover these.

Ds2 had some, one was in black gulch and led to Lucatiel.
