As a Strength build you will be able to use greatshield which may prove useful ;-)

About Strength weapons for DLC I would mainly use
curved greatswords, great hammers and greatswords.
what about axes?
Should I keep a dex build then?
My first playthrough was dexterity also but with the nagakiba and it was amazing. Since I only kept going with a single character I found at higher levels it's all about having at least two stats such as dex/faith or strength/faith. Or strength arcane and dex and intelligence.
Strength is arguably better than Dex since it levels resistance while dex doesn't outside of some magic defense. I personally love dex much more than strength I can't get my playstyle to be good with the zonk type builds and it's mostly because im a bit too aggressive and don't know the movements of the bosses that great. In that sense, strength too me takes more skill than dex which may just be a controversial anecdotal statement people disagree with. I just think you have to know when to hit or else you will get wrecked in the animation windows.
With that said, strength weapons I've enjoyed are blacksteel greathammer with the ash of war that makes you follow up hit 80% buffed (something resolve). It's great with guard counters too. I'm not that good at that style either so I usually use Endure to make myself more tanky as it boosts your damage negation a TON for 3 seconds and is cheap and super fast to hit with l2. Lots of ways to use talismans that can make the weapon act different from a big damage bonk to a guard counter beast.
Blood fiends arm is awesome if you have strength to wield it but can spec high into arcane. Strength arcane is an S tier combo imo that may be one of the best builds in the game.
I just found Blood Fiends arm last night and debating respecc'ing into STR/ARC now lolol.

You can keep dex build but for last boss you may need greatshield
and greatshields require certain amount of strength.
Axes should be fine, but many bosses and enemies are
vulnerable to slashing and piercing damage.
