Both "fair" and "fun" are very subjective. You know yourself the best, nobody else can tell you what is fun. The developers obviously put in -all- the weapons and spells to have fun with in your own way.
Having said that, typical straight sword weapon types are good in all souls games and usually can be upgraded easily.
That's true, it gave me the feeling that many skills, like katata, took away a lot of life and posture.
The former is a matter of designing a game that is accessible to a large number of people. The latter is a matter of fact, that reality is harsh and will not acquiesce to any lack of preparedness
I had Lot of Fun with base samurai weapons. Close combat ? Uchigatana for you and only gets better with practice. Longe range ? Standards samurai bow to deal with those annoying snipers or deal with a trap before It gets you.
Also a small parry shield on left hand. Its much, but its something to work It and have some Fun.
You're not wrong, though; Fromsoftware ensures all Katanas are above other weapons in most regards.
