It's best to predict a Waterfowl dance will come after she creates a bit of distance to mid-range. Rather than moving in, move away, and just keep sprinting directly opposite of her. While close, you ought to be attacking and breaking through her attacks or at least just avoiding them. The only time to be close is then, so stick to mid- to close-range in order to react appropriately.
Otherwise, check videos for specific dead-angles, blind spots, and movement tech. Those are much better at conveying what to do
at a moderate distance you can run away, but if you are at almost close distance (still at mid but almost at close) you could tank it with a shield or use a secondary weapon with bloodhound step to run away and dodge the first hit.
You can still run away, but if you don't have time then double roll away for first flurry, roll through the next two usually works for me.
