at 30 vig you cant get one-shot in late game unless naked (with few exceptions)
when using BHS for example, not putting those points into vigor might be a reasonable decision.

I've been able to one shot 1k HP since level 100 on my faith build

you didnt specifiy the purpose of your post. is it for arena?, is it for invasions?, is it for coop?

so i just chose some dude optimized for clearing bosses as a coop partner.

the reality is that i agree with you but the reason is a bit more complex.

the thing is, they need to make sacrifices to reach certain breakpoints (cast speed,poise, lightroll, requirements) , especially if they want to use FP intensive options.
But its better to go for 40 vigor and lose some damage negation as the sacrifice by using 1 or even both soreseals.
1450 HP with 17% negation is better than 994HP with 33% negation for example.

I use soreseal to hit weapon req for my mage. I use dark moon sword and moonveil in one hand. And mage staff in the other. Add to that blaid armor with a witch hat, it requires also at least some points into endurance. Soreseal saves me from spending 20 points on other stats up until level 120. After that i can potentially replace it with some other talisman.

Just use an unupgraded weapon if you encounter a player with low Vigor. Oh, wait, you can't know their Vigor until you oneshot them.

See the problem? How could people on their first playthrough already know how to optimize their character, what to level and what weapons/items to use?

30 vigor is alot i seen people at level 200 with 1000hp or lower il never understand why people dont level vigor

Because 30-40 vigor is often enough for a playthrough. At least on the NG. Especially if you focus on spell or incantations.
