If you need ranged options, most "wind" types of AoW like Storm Blade or Vacuum Slice hits harder not based on weapon AR, but on the attributes and how high the upgrade is.
If you want a more well-rounded and more easily obtainable weapon though, the Nightrider's Glaive is solid all around, and can be adapted to almost any build.
It's a little bit of a pain to farm, but the Noble's Straight Sword is pretty underrated. It's another one that good with a lot of builds, and it's a very light and fast weapon.
1: Pick a favorite weapon or weapons then distribute your stats ideally to use them.
2: Pick a primary stat then use any weapons that work for it.
I prefer the second strategy. For example I'm currently playing an intelligence build with enough strength and dex to use the darkmoon greatsword, moonveil katana, wing of astel, death ritual spear, clayman's harpoon, etc. When I feel like making it more melee focused, then I'll only use close range sorceries like carian slicer, piercer, adula's moonblade, gavel of haima, etc.
I'm sure strength and dex are probably a bit more melee oriented, but all of the damage scaling stats have melee build options.
Bolt of Gransax is in Leyndell so early game you'd have to settle for the regular Lance you can get in a Limgrave military camp, as soon as you've got 30 Strength you could go to Caelid and pick up the Visage Shield (if you're OK with twohanding it whenever you wanna use it)
(Also don't forget to upgrade the shield to increase the flamethrower damage)
