Report a translation problem
Not a fan that pure rolling doesn't seem to be a viable solution to it, but some fine folk did give me at least some reliable ideas that don't invoke relying on gimmick items.
When she initiates it - just start sprinting away from her and then JUMP at the last second as her first combo almost reaches you. This will create just enough distance not to get hit by it.
2nd combo is dodged with either pure forward roll or right-forward roll. I prefer the latter.
For the 3rd combo just roll straight into her. Because she attempts to pull a "nothing personal, kid" and dashes behind you - you will simply end up switching places with her.
For the final ghost-slash i prefer to play it safe and take a couple of steps back to get out of its' range, then retaliate with a jumping heavy attack. There's some AoWs that are particularly good for punishment here. Piercing Fang particularly comes to mind.

The fact that she can cancel into it at any time means you have to limit yourself to 1 or 2 melee attacks before you start retreating if you want any kind of consistency. Otherwise you just have to get lucky and have her not waterfowl at the wrong time through the whole fight, or just be tanky enough to survive being hit by a lot of it.
When I beat her it was during a chellenge run I did naked using only daggers. Far from perfect but it shows in general how to deal with waterfowl.

Yeah, that's the best case scenario, the problem that cause many deaths is when she start the animation in pure melee range, there not much you can do if you missed the window to freeze her mid-air appart from spamming Indomitable Vow or hoping for the best with Barricade Shield on your best greatshield.
You can still eat about half of the 2 first parts and survive if you're physical resistances are buffed while panick rolling in it, but really bad trade even if you survive.

If you fail to dodge the first flurry of WF, DON'T panic roll. That's pretty much guaranteed death. Just keep trying to back away while she whacks you. Then simply roll backwards with proper timing at the second flurry, then roll straight through the third and back away from her as she finishes and use that opportunity to heal.
You can easily bait out WF from a distance by throwing something at her or shooting a spell. Start running away as soon as you see her jump up into her WF stance to make it easier to dodge the first flurry completely.
The standard answers usually give you all the solutions to Waterfowl.
My issue is: how are you supposed to learn these when more likely than not you only get one chance per fight initially, having to work your way back to the point where she WTF's each time.
Not an issue? Then why does a mod where all she does is Waterfowl exist?
Adding another standard remark: I've beaten her twice, solo. First time, not a pleasant experience. Second time, Morgott's cursed sword had been shown some love by Fromsoft. Almost enjoyable (it was nerfed since, for cheese use Blasphemous Blade).
That one move changed my mind, and I ended up using the mimic tear.
It does so much damage, and getting a few minutes into the fight to the point where she uses that move to practice dodging it is annoying. Everything else in the fight can be worked around with intuition and game knowledge.
So I could "cheat" in two ways
1. Look up a guide on how to dodge it
2. Just summon and spam some move.
I chose the latter. Either way I was breaking my rules at the start of the run.
