I hate that you can miss quests in this game.
The game is already extremely long and replaying through NG+ to get one or two things sounds terrible.

You don't have to do every single quest, and if that's an issue just google them.

I see what you are saying but you are aware you can just fly through the game in ng+? Like you can just bounce between major bosses and ignore all side content.
I hate that people still think the quests matter.

The "quests" in this game are not like quests in quest-centric games. You don't have to do them all (or at all), and if you do that is a special challenge you impose on yourself and absolutely not the normal way to play.

If you do them all, you should do them out of interest and because figuring it out is FUN to you.

The expectation to complete them all - and to be entitled to do that or that this is something you have to do as a regular part of going through the game once - will result in tears. This is the opposite approach of what you should do.

imo a first playthrough is special, and to enjoy it as much as possible you sadly have to look up a spoiler free guide outside the game

Yes, a first playthrough is special, and going in blind into a soulslike game - and knowing that you won't find everything - is the best mindset for that.

could not agree more. games like this offer more than just a piece of media to consume. they offer a playspace; you have the opportunity to play however you want. the correct answer to 'where do i go next?' is always 'wherever you want'. it's up to the game to motivate players to make a decision on that.

i think a lot of people end up treating these things as rote checklists that they finish up and then move on from.
