Your mean the Scadutree Avatar? If so then fire is your friend here - it has a -40 negation to it.

Personally I use Blasphemous Blade for the first two phases and then Frenzied Burst but any fire spells, AoW, or weapons will chew it up.

In my experience the hardest part is just being able to hit him in the second phase without being repeatedly hit by the thorns, so I opted to just pound him with ranged attacks during it, I used the magic greatbow thing but I'm sure there are better much better options, I just didn't feel like changing my load out. Also getting more scadufragment thingies will obviously help.

Here are some tips:
If you are using anything that isn't upgraded with fire, you are doing it wrong. I tried to take this boss with my bleed star fists that destroy most things in the game, and could barely scratch it. Don't bother with anything unless it's fire.
Delay your dodges when it does thorn attacks. The thorns come out of the ground a bit after the attack itself.
Approach the boss, let it do the circular swing attacks, dodge em.
If it headslams you, dodge it and hit his head. If not, go near him and get a couple hits is. When he does the thorn aoe attack, either run away, or time your dodge to avoid thorns.
For third phase, dodging the ranged explosion can be hard, use a greatshield if nothing else works.
Try to bait the headslam attack, it really helps you deal damage fast to it. If you hug his body too much, he will pierce you to death with the thorns sooner or later. If you stay too far you won't damage him. Find a healthy balance.
