NG+ & Stats leveling question
I've finished the game yesterday and begun NG+ with 80 on DEX.

Going forward, there is any point in leveling DEX more or the dimishing returns are not worth the investment?
Investing in other skills would also allow me to try different weapons, since in the previous playthrough I've mostly used only 3... so that would be good, but at which point should I stop investing in a given stat?

Second Question: last playtrough I've killed every boss I could find EXCEPT Consort Radhan because I was getting demolished during phase 2 and couldn't be bothered to learn his moveset...
now that I'm on NG+ I would like to beat him as well, so there are any recommended stats or level I should reach before attempting it in order to have an easier time this time around?

NG+ starts you off with double the runes per kill vs. a fresh new game. If you're using standard weapons (not somber) you should look into doing a Quality build. Just start pumping STR and change your weapon's affinity to Quality when it starts doing more overall damage than Keen (pure DEX). With the DLC in mind, I'd also put some points into Faith, maybe 20 total or so at least since many DLC enemies are weak to Holy and incantations offer a lot of flexibility.

For PCR, do NOT use the summons by the fog gate. Each summon vastly increases his health pool and stance guage. Much moreso than other bosses throughout the game. Also be sure to grab as many Scadutree fragments as possible. He bleeds and is susceptible to Frost for extra damage. Don't be afraid to use a shield, and if you do, use at least a medium sheild and maybe put Carian Retaliation on it to increase its parry frames. There's also a Physik Tear that adds a perfect block similar to Sekiro that enhances guard counters considerably.
For the first question, going beyond 80 is not really helpful. On a lot of stats, you can even stop at 60 and do pretty well. It would probably be best to start investing in something else.

Challenge in the DLC is a lot more dependent on your Scadutree Level than your Rune Level. Pump it up as high as you can, since you're in NG+ you can probably max it out at level 20 very easily. For PCR specifically, invest in Holy resistance. As much as you can. That's the single best thing you can do to deal with him.

I was actually thinking of doing this NG+ 100% relying on Incantations spells for attack.
Would that be a bad idea, especially with Consort Radhan in mind?

I might recommend Str/Fth or maybe Dex/Fth instead of pure Faith. Pure Faith builds can feel a little glass-cannon-ish, and many incantations are difficult to land consistently on a boss as mobile as PCR. It's certainly a viable approach, but focusing on buffing incantations and using a melee weapon as your damage source will probably give you a better time.

If you struggle with Radahn level up Strength between 30 an 50
and use greatshield + piercing weapon with status effect.

Gaius weapon is excellent with bleeding or frost if you have high Strength.
Antspur Rapier is great weapon for any build.

40 Endurance is recommended. Active Radahn's Great Rune will give you more stamina.
Talismans for quicker stamina regen and improved guard boost recommended.
If you consider endgame and DLC difficulty, leveling VGR to 99 should be top priority, if you plan to continue in high NG cycles.

However, as the game has this bug where the map doesn't reset on entering a new NG cycle, and there's no journal either, it becomes impossible to track progress. So after a while, you just lose interest as you can't just play 24/7 at all times. And you also can't just write a 50 page journal manually on paper for every single playthrough.

Just keep deleting you save and replaying NG. It's a lot more enjoyable.

Depends on your build. If your build solely scales off dex for example, and you have like 60 vigor and whatever other stat you want let it be mind or anything else, you can 99 your dex its fine.

But if your build can also scale from str for example, after 80 dex investing into str almost always gives you more damage.
For consort radahn, fingerprint greatshield, buffed by scholars shield spell, coupled with your choice of spear or rapier with bleed. If you go with antspur rapier you can make it infict bleed and scarlet rot at the same time, but it has abysmal range. I usually go with the bloody hellice, easy to get, uses somber upgrades, so easy to make it plus 10 early. For talismans use damage negation ones and stamina ones. Keep in mind you will need to learn to dodge the meteor attack, that oneshots you with pretty much any build, and the grab attack as well. If you get grabbed a second time it's insta death.
Buff your shield and keep it buffed, hold it up, and poke until radahn is dead. Might want to level arcane for the bleed.
Generally speaking, you cant go wrong with a bleed build, most bosses get wrecked by it, and bosses with large healthpools like the fire giant are made trivial with it.

It is easy to avoid with Bloodhound Step though.
