Can we adjust game level ? First time to play, want to start from easy level first

no, it's fixed difficulty, your level, build, gear, playstyle, etc dictates the "difficulty"

i mostly use the site of grace quick travel menu as it seems to vaguely be laid out in the tier of difficulty each area is very similarly to DS3 to know which areas are harder or easier

Start with warrior and dont go wandering places you think will be too difficult, grind to lvl up, find spirit ashes and use... There is your easy mode.

You adjust the difficulty by leveling up. You want it easy, you level up ad infinium. You want it hard, you stop at, say, level 15.
