Your low damage is probably due to weapon not upgraded enough
and if you receive a lot of damage it is probably combination of low Vigor
(you should have over 20) and low fire resistance.
Equip talisman that increases fire resistance and with only 10 Faith
you can cast fire resistance incantation as well.
It gives you health and soft caps at 60. Soft cap being the bonus you get from putting points in to it greatly diminishes. Weapons also scale off stats significantly better when they have high upgrade levels, around +16 for normal weapons. That is when putting points in to damage stats, str/dex/fth/int/arc, will start to show increases to damage. A +0 katana that scales off dex will barely see any damage increase if you have 20 dex or 60 dex, so it is much better to increase your vigor so that you can survive significantly longer.
An example being, when fighting a boss, would you rather do 15 more damage per attack or be able to survive 3-5 more hits before needing to heal?
The Katana is a solid weapon, being pretty fast and even having innate bleed that, when you keep applying hits onto targets, eventually makes them take a large % chunk of their health. The katana also has a pretty good Ash of War attack, the Sheathe ability. When you hold the sword in two hands, and hold the left trigger (left hand strong attack), you assume a stance. From there, use a right hand light attack to do a quick horizontal swing, or right hand strong attack to do a more powerful but still quick vertical swing. This vertical hit in particular is very strong and can quickly break an enemy's stance, stunning them and opening them up for a critical hit. It uses up the blue bar of FP though so you need to be mindful of that.
Godrick has some big sweeping attacks but often has big wind ups to them, and even swings that let you get close up to his body and hid under his arms. Find those moves and wail on him with either fast normal attacks or that vertical Sheathe attack I mentioned. For phase two, when he starts shooting out streams of fire, if you're ever close enough when he begins them you can run up to him and hide around his flamethrowing arm. And any of his big swinging combos, you can just run away from him and he usually struggles to keep up, as those combos don't let him travel forward much. Also, when he slams his axe on the ground, it creates ground shockwaves. You can jump over these if you're not comfortable with your timing dodging them.
If you beat Margit then Godrick is going to be easier. Only has a few attacks that you can learn quickly. He s generally slower than Margit, and easier to read.
Ok, as soon as you re mobile run at him and hit a couple of times. The fire goes left to right and he s slow enough that he won t catch you.
