Report a translation problem
since epic uses also EAC in a different version my assumption would be that a troubleshoot for a epic game screwed up the EAC installation or the EAC installation for third party use is faulty.
in this case i would try this one
delete the 'EasyAntiCheat_EOS' folder in C:\Program Files (x86)
then Use Registry Editor to delete all keys and values that had 'EasyAntiCheat_EOS' to do this search up "REGEDIT" in search open it.
now right-click on HKEY_LOCAL_MACHINE > Find and look up the term EasyAntiCheat_EOS and delete all you can find by search again.

then go into the game files in the installation folder and delete the easyanticheat folder there
verify gamefiles of elden ring and restart windows
then go again into the game files in the installation folder and navigate to easy anti cheat folder, click on the install_easyanticheat_eos_setup to reinstall EAC fro elden ring
a prompt will pop up and hit enter.
if the running epic own eac service cause the problem the only explanation is you done some troubleshooting in the past with epic games that now is no longer running in a standard mode, could be a constant running service or other things, nearly impossible to find out
what i would like to know is the crash log you get in window event viewer (and if even one is created)

hmm the log points to a issue with windows internal and normally this helps, strange is you say removing epic would help what should not be the case
if you have tools like process lasso or system/process explorer installed, deinstall them
run a full system check/repair
open command prompt as administrator
run this command
dism /online /cleanup-image /restorehealth
After this is finished
Sfc /scannow
Repair the c++ redistributables
