You'll probably be able to recover from a cloud save through steam, I've done it before. It's something like Help > Steam Support > Account Information > Cloud saves.... something like that and you should be able to grab an older save and use that
Keeping manual backups of save file is about
only thing that can save you in situations like this.
This was true in Dark Souls Prepare to Die and it is still true.
I also had a suspicion of who did that to you, the link to their profile is on mine. Block them.
i'd recommend recording your adventures from now on.
It's super-easy these days, I think Nvidia, Windows, and probably AMD have "instant replay" features implemented.

They're cheaters, who eat ♥♥♥♥ and love it, not hackers.

Try some restoration software or live cd
The files that got overwrite stays on the drive as far as i know
