Great jar knights?
When should i face these enemies? cause they seem waaay too strong for this point in the game.
They freaking 2 tap me at 35 vigor.

Dragonbarrow is high level area.
Use Giant Hunt, Stormcaller or Black Flame Tornado against them.

They are dumb NPCs and can be cheesed as such.

dont have any of that, i just defeated Renalla and made my way to caelid.
Is it still too early? havent played since elden rings release so everything is kinda new to me again.

Too early but Stormcaller you can pick up before Godrick.

Northern part of Caelid is meant to be played later in the game, after Leyndell.

noted. did feel like these NPC's were a bit overpowered, both in gear, abilities and just damage output. even with my ultra sword i hit them like a wet noodle.
Just a tip: The npcs might be strong, but they are dumb. Lure them to a cliff, them smack them off it, or at least make them roll off it while rollspamming. They LOVE rollspamming.
Jar Warriors are actual player builds I'd come back a little bit a later and attempt to knock them off the ledges with ash of wars that knock up NPCs.
There is a branch you can stand on, and more often than not the npcs will just kill themselves off the cliff.
