How do you manage to replay this game?
I'm about to finish the DLC, and I was thinking about replaying it, but there's no way I'm going to explore all of Middle-earth again. The game is massive, and I wouldn't want to revisit the same dungeons or paths since there's no reward or sense of discovery. So, how do you replay this?

you don't have to explore every area and every dungeon on subsequent playthroughs

Take a long break (~6 months) before replaying, that'll bring back the sense of discovery. Try to forget about the game completely in the meantime, too.
Personally i just try to beat the whole game with X weapon or fighting style, as a form of roleplay. My first "real playthrough" guy ended up being a greatshield + lance tank.
Then i played as a canonical Carian Knight.
Then as a Elemer of the Briar cosplay (spamming Eochaid's Dancing Blade is so fun).
Currently i'm replaying as a Haligtree Fundamentalist Paladin.

I compensate the time-wasting nature of open world traversal by listening to my favorite podcasts in the mean time. These games became my comfort zone after a while, so now i can play them without utilizing much of my mind, so i can focus on something else while going through the motions.

There's a few reasons I replay these games.

1, playing on new game plus boosts the difficulty. Can be stressful given the type of game this is but I find it a destress tool having something to vent on.

2, low level runs. You main character is likely gonna be very high level. Soon enough you get to where you can do anything without care. But if you stick to a certain level that's another challenge for the game to time you trying to make due with less. Also keeps PvP from getting stale as lower levels tend to have people using different builds instead once in a while.

3, it's a damned good game! Deserves to be replayed here or there!

4, collections must grow. There's so many weapons to collect that it'll take multiple NG+ cycles to find them all. Even if you don't use most of them having them all ticks that OCD check mark in my brain. I found a weapon last night that I totally never knew existed for example. And found it in an area that I swore I fully explored.

Nope.
Replay the game when, and if, you feel like it. You are not forced to replay it immediately.
I mean you can just ignore most optional stuff the 2nd time and only go for stuff you missed and go for a new ending you did ranni's ending well now go for frenzied flames you did dung eater questline you can skip it now but now you start idk patches quest because you accidentally killed him the first time for example, you don't have to redo everything again to replay the game.
I dont know.......Enjoying the game? Trying different (OR EVERY SINGLE) build? PVP? Co-OP? Collecting and killing EVERYTHING?

Also playing Elden Ring with friends but i understand not everyone has that "hardware".....

Simple - I wanted to explore all of Middle-earth again. The game is massive, and I wanted to revisit all the dungeons and paths since it's FUN TO DO for me. Also there will be ingame rewards for my char in the form of items and levels.

I skip most of the side content

Still have some pretty boring and long horse riding parts but I just listen to music while playing so it's not that bad.

It's fun to try different builds and I just love seeing this game's environments and fighting it's bosses. I don't need that sense of discovery to replay.
