Your progress through the game seems a little fast to be at the end Bosses.
Short of going back and getting more levels, a better build, more practice avoiding damage? Doing it solo may not be feasible.
Having someone do it for you is one way. But to what end?

However, your spirit ash does not increase the bosses health.
Anyways, just cast Golden Vow before the fight and all those hard-hitting holy spells the boss flings will be doing 1/10th of your health as opposed ot something like 1/3rd.
Use buffs and trinkets to negate holy damage, and then a spirit ash to get breathing room for you to nuke. He should be easy if you always stay at max range. Having a Mimic summon with shabriri's woe talisman can help too if you summon it and them take the talisman off yourself and move away.
Radagon, equip holy resistant talisman
and use holy protection spell.
Edit: as a mage you can kill him easily
with Night Comet. Elden Beast with
Shard Spiral or Black Flame Tornado AoW.
