For more of a melee focus, take down the starting tree Sentinel asap as his golden halberd is a top tier str/fth weapon for a lot of the early game.
Notable str/fth weapons absolutely worth picking up:

Godslayer's Greatsword
Maliketh's Black Blade
yeah the halberd is pretty good but im not much of a fan. if anything im just trying out builds before i try pvp
isnt the halo scythe hard to farm early game? or should i do so after leveling up a bit

Flock's Canvas Talisman, Godfrey Icon, Lightning/FIre Scorpion Charm, Greatshield Talisman (Because I discovered shield after Ng+6 and realized guard-counter is fun :D). Old Lord for coop instead of shield talisman.
For incantations....
Black Blade (I start with it, specially good in coop, bosses go brrr in seconds by 2-3 players burst afterwards)
Lightning spear (Bread and butter, if I dont feel like going in melee)
Ancient Dragons' Lightning Strike (Big boss? Big pile of oneshot)
Burn, O Flame! (For those smaller bosses, that are resistant to lightning)
Swarm of Flies (When I feel like it, I just grab the Silver Tear Mask)
Fire grant me strength
Golden Vow
Blessing of the Erdtree (Coop specific, running Old Lord Talisman here)
There are many more that are useful, but I prefer to be melee first, caster second. So unless Im fightning big bosses, where I can cast red lightning, I go smack them, and guard-counter them.
So far works good, in both solo and coop. Ran couple Ng+ with it, and plenty of end-game bosses in coop. Never die, always win (Unless host goes suicidal)
I spent most of the game using THE greatsword, with only 17 faith for lightining spear (25 by the end). Beastial vitality is the most FP-efficient heal and does not scale whatsoever, and neither do the defence buffs or status recovery incantations, which made having high faith mostly inconsequential. Even better their FP costs are recouped very quickly if you can kill 6 pests while equipped with the ancestral spirits horn talisman.
However there are some scaling buffs which still do not scale off of strength no matter what, such as weapon buffs. And ultimately even the claw mark seal scales more with faith than it does with strength. So something like lightning spear will still do very worthwhile damage if you dump into strength, especially if it is the opponents weakness, but it won't match what a pure FTH-user can do with most of the other seals.
It will still one/two-shot most pest enemies as long as you're fighting in an appropriate place for your current power level, and is capable of knocking quite a chunk of health off bosses when your other incantations aren't finding much use.
I started with Vagabond, which fits decently with 4 less levels wasted on INT and ARC.
My level 150 stats ended at:

14 dex
9 int
25 fth
7 arc
I didn't respec but there is still room for improvement/tailoring. Like two of those points in dex are useless for me because my weapon only needed 12 but I wanted to toy with other weapons for a bit. Mind at exactly 25 was purely a matter of preference because as long as your base mind is between 20 and 45 mind, Godricks rune will provide 30 FP for the next five additional points in mind. That is a pretty decent fraction, especially when you are lacking the FP capacity to use a full cerulean flask.
And the stamina game is already very manageable without high endurance investment, instead using great jars arsenal to help with the defence/mobility side of things. Any of those points that I didn't feel that I needed from mnd/end/dex could have been dumped into vig or faith instead.
Further adding to the defence was the greatswords guarding ability which is superior to most small shields in the game, even competitive with some medium shields. The only really annoying thing is that it didn't give me much room to play with the non-infusable faith weapons.
