My tip would be have patience, study his moves, learn his pattern and how to dodge his attacks. Don't attack him, just learn to dodge.
Only after this step you can start to look for openings and get in an attack, but don't get greedy.
Personally I used different strategies depending on my build.
For me the easiest was ranged attacks with pure faith build.
My other way to deal with him was 2-handing the Greatsword with a strength build, but with this need to get in several attacks until you can break his poise and get in a critical hit.
Another option is to parry him, but I'm very bad at parrying.

I also suck at parrying. I never thought about just dodging a boss to learn when to attack so maybe that will help. thanks for the tips!

I've learned for this boss, what worked for me was to roll into his flying sword attacks versus trying to roll away. It seemed staying close to him made avoiding his telekinetic sword combos much easier and allowed openings to attack.

Stay close is definitely my tip for this one, I got my ass kicked too many times before learning that. His up close moveset is a lot less scary, like his big shield slam that he sometimes does a follow-up for can be punished even if you wait and react to the follow-up or lack thereof.

Stay close dodge his shield slam. Use a shield till you're confident enough to dodge his attacks, but watch your stam.

You either stay close to him or as far away as possible and use ranged attacks.

Use poison or rot. If you have 20 Dexterity use Antspur Rapier.
Antspur Rapier is effective against a lot of bosses so it can come handy later in the game.

You could possibly be underleveled, consider returning later.

ohh ask for help or invest in magic and use comet - he is easy then.
Just be wary of the range of his attacks , that stupid sword is deceptive , i hate the caelid version cause of how hard it hits

Greatshield Soldier Ashes is a very good strategy with him. They keep him in place. Then hit him with distance weapon like there is no tomorrow.

fighting him on close range much more easy than far.

I always saw it as a ♥♥♥♥-measuring contest and whipped out BHF or some colossal sword, charged R2, jump R2, uncharged R2, and he's crumpled. Try to repeat with a heal on his get-up.
