Only after this step you can start to look for openings and get in an attack, but don't get greedy.
Personally I used different strategies depending on my build.
For me the easiest was ranged attacks with pure faith build.
My other way to deal with him was 2-handing the Greatsword with a strength build, but with this need to get in several attacks until you can break his poise and get in a critical hit.
Another option is to parry him, but I'm very bad at parrying.
Use poison or rot. If you have 20 Dexterity use Antspur Rapier.
Antspur Rapier is effective against a lot of bosses so it can come handy later in the game.
You could possibly be underleveled, consider returning later.
