What do people think is most fun builds?
I've played like 3 characters for around 30 hours each and I can't really seem to keep interested much past that. I've tried a quality build (Str/Dex), Dual-wield bleed build (Dex/Arc/some Int), and Paladin type (Dex/Fai). I'm considering if I should just muscle through with one of these or if I should try something else. I just started a pure sorc build (Int/Mnd), but I can already tell it's going to get boring fast. Any thoughts? Anyone else have this problem? I keep thinking I need both spells and melee to keep things interesting but maybe I'm wrong.

I wasn't looking for a popularity contest, I was looking for ideas and people's experiences. Yes, I want the eventual character to be combat effective, but also have a cool idea behind them. It seems like I've already covered the main archetypes (Pure melee Quality, Dodging dual-wielder, Paladin buff melee, and pure sorcerer). Just wondering if there are ideas I missed or if people really think I should pick one of those 4 and just keep playing them.
Shield builds are popular in elden due to shields being really good compared to souls games with those block counters, except that..

- I was wondering whether Bow build would be doable with all those special ashes
- Those special reusable items with abilities sound fun. Dunno if those are any good though, but Omen set + regal omen bairn sound fun to roleplay Dung eater
- For pve maybe sneak type character with darkness spell to reset enemy awarness for that Misericorde crits, maybe with crit relics for heal/fp heal just to make it interesting.
- Fist weapons, perhaps parrying character
- Jarcannon build with some melee of choice support
Melee and magic combined warrior character.
I picked a prisoner starting character with an Estoc and just having fun upgrading armour through the game. Upgraded to a chainmail suit which does bugger all. Going to try the iron set next.

Wait, how do you upgrade armor?
I had fun with my colossal weapons barbarian dude who also crafted and used bows :) The ability to quickly stagger foes is really powerful - I made a point to kill all the rune bears ;) It was also fun to put sacred blade on the zweihander and burn down those death rite birds. Or stagger those tree spirits and then saw into them with the weapon art of Ghiza's pizza cutter.

That sounds kind of fun...never had a build that staggered enemies.
Swap weapons and armor according to situation. Swap katana for hammer time.
Pure strength build. You only need to level 3 stats. Vigor,endurance, and strength

You can get the zweihander quite early from the merchant on the Weeping Peninsula. Sacred Blade can be found easily in Limgrave. Later on put Flame of the Redmanes on the zweihander (or your colossal sword of choice), and you can stagger most enemies with one or two applications of it. And as Anewbous mentioned, you can focus on STR, VIG, END. Note that STR also improves your physical defense.
I like to base builds off of types of soldiers that have existed through real history. Particularly soldiers from very successful empires. In my mind, the fighting style and tactics built vast empires, so how well would it work out in a video game? My current character is based off of a mix of early/late roman infantry, with a spectral lance ash of war, a pike, and the biggest and strongest shield I can find. i also like to employ a play-style that matches the tactics and fighting style of that soldier I am basing it on.

I'm currently going for LH Whip + RH Dex weapon (Rogiers Rapier or Naginata) with some light dabbling into Faith for buffs and a good chunk of arcane to proc bleed/poison. Having a good time so far.

Lightweight build, infusable katana with sheathe, dragon communion spell focus. For some reason doing a lightweight build with a katana is really fun.

Try some challenge runs like daggers only, no blocking, no jumping, fastest time to 1 million runes, no torrent, etc... tons a ways and unique builds you will come across while doing some of those.
level 1 is the only legitimate build, everything else is coping
