Gargoyles are completely immune to frostbite, poison, rot, and bleed. I'm guessing your +9 weapon is river's of blood. It does split fire damage and the gargoyles resist fire damage. The arena might be classified as "wet" with the water on the ground, enemies/players standing in water take less fire damage.
They're weak to magic and strike damage.
I don't know what stats or weapon(s) you;re currently using. Giving some more info might help others...help you. You can always summon, but if you want to do the fight solo it would useful to know some more information to develop a strategy.

As hilarious as it seems, they're also quite good at breaking stance to let you get in that critical hit, too.
Another VERY solid choice is the Fallingstar Beast Jaw; it's a colossal, which is awkward to swing and use if you're not used to it, but its weapon art is what makes it shine. Decent cost, decent damage, and decent stagger to boot.
