Well i wanted to know if its really that hard as everyone is saying.
I want to play a game like this but not souls like, but it doesnt exist, so im wondering if i should buy the game or if i will get frustrated and waste my money :(

Just.....Just buy it during a sale, OP. The main game only for now, give it a go and if you enjoy the experience buy Shadow of the Erdtree.
Í mean yeah, the enemy variety or lack thereof was a big talking point about dd2 and thats the reason im not buying it.
No, it is not that hard. I waited for a full year after the release of ER, because I also suck at gaming and never played a FS game before, but then I just bought it.
There are several features, that make the game very accesible for newcomers, especially the spirit ashes help a lot. So I used them in my first playthrogh. In my second, I played without them.
Don't be afraid of that game, it's one of the best I've ever played. The thing you need the most is patience and you need to be willing to explore a lot, because the world is huge. If that sounds good to you, you can beat the game.
Do these ashes have any downsides? Can i call them anywhere or only at specific places?
You can call them at most bosses and areas. There are a few bosses and areas where you cannot summon them, but those are surely not the really hardest ones in the game.

For the most part, what's actually happening with those games is that there's no hand-holding of any kind. Rather than just being hard just to be hard the game is more idiot-proof than anything else.
Even the things that make the game easier aren't exactly explained and must be discovered along the way. The existence of guides and wikis downplay this aspect since in theory the only help you should rely on is player messages but even with that there's still many aspects of the game that require ingenuity and discovery.
