Do you have to summon the NPC's for final battle to get their items?
Don't really wanna buff the bosses stats if I don't have to. Can easily get through first phase without issue, but with the buffed stats from bad AI npc summons, and with the lights, particle effects, and the boss model itself I am having trouble learning the moves in phase 2. I would rather just beat it normally, but don't want to miss out on the npc items for future playthroughs

Summoning an NPC for a boss fight wont increase the bosses stats. Thats only when you summon real players for the boss fight.

Really? I thought any npc summoned outside the boss wall increased it's stats. Guess I'm just bad at the game then. Gotta work on my playing then

This is false. Summoning NPCs before a boss fight will 100% effect the boss stats. The only time it doesn't is if you summon them IN the boss room after the fight has started like Hornsent with Mesmer

But to answer the OP question no you don't have to beat the boss with them to get their stuff

No, you just have to have finished their quests to the point where they can be summoned.

Thanks for clarifying. I always figured the npc's had no effect since i did the same damage to them.

no, they drop it anyway after the fight end if you finish thier quest.
