New to the game, can Samurai use heavy 2 handed weapons like Grafted Blade Greatsword - if yes is it good or should Samurai stay with katanas?

Use any weapon you like. All your starting class determines is your initial stats and gear, beyond that there's precisely zero difference.

Starting class only impacts your initial stats and gear sets; it does not impact how you gain experience, distribute stats (you have direct control over that), or what you can/cannot equip.

So yes, Samurai can use large weapons. So can the Prisoner, the Wretch, etc. It all depends upon how you build and level them.

the starter class only determines with which status points and with which equipment you start. start with the Wretch. it's level 1 and you can customize it best according to your taste. you are not bound to any form of equipment. you can use everything with every class and also invest in other status values later and even respec from a certain point.

Every character is the same, they just have different starting gear an are better at becoming a minmaxed build of X sort

Vagabond is basically the easiest to turn into anything, but Samurai also fits the bill, you can end up transforming the character completely.
