Same thing applies to the damage stats, STR and DEX. Soft cap for them, to my knowledge, is 60 and you get marginal increases past that to 80, where further stat increases provide next to no actual benefit. So if you're using the Soreseal past STR or DEX 60, you're getting a very minimal increase to damage for a substantial amount of extra damage being taken. At that point you're better off swapping the talisman out for an Heirloom talisman, or one of the more build-specific buffs like Blue Dancer or Winged Sword.
Add to this that enemies and bosses in later areas do substantially more damage, making that 15% extra damage you're taking much bigger than at lower levels with lower incoming damage. Personally, I wouldn't use the Soreseals past Leyndell unless you're trying to do some kind of try-hard challenge.
Aka: you take less Damage in Lingrave but pass Liurna you will start taking more damage. In the DLC, where Soft Defence is King, you really do not want to use these.
If you use the sorseal early in the game, the 20 levels of these stats can make the difference between something inaccessible and something accessible (weapon use, shield use, roll weight for the same setup armor)
The more you level up, the less relevant the 20 stats become.
15% damage reduction is often not a big deal.
