Moar. Always moar. But for most melee purposes, 51 is a good starting point.

PVE: most smaller weapons cause 50 poise damage from enemies, so if that's a problem for you, at least 51 poise can save you from staggers from most one handed weapon attacks. if i remember correctly for bigger weapons the breakpoint is around 81 or so.

PVP: It's difficult to not to get staggered even from a dagger, most weapons have high poise damage on first hit, if you want to trade into smaller weapons, go for 89, with that you can tank the second attack of a lot of smaller weapons.

Important, heavier weapons when used two handed will provide hyper armor, which is basically poise during animation, which can also help you out.

Rats and stray dogs dont care about poise......so if you face one in Elden Ring just run.

Now seriously 65ish should be "ok" but the interesting mechanic is the hyper armor granted by certain skills.

Ashes of war like wild strikes or Onyx Lord Repulsion+65 poise= immovable object

If you can get over 100, as much as you can get. If you can't go over 100, don't bother with it at all, you won't really hit any important breakpoints you can't just hyperarmor through anyway under 100, and after 100 you start getting enough poise where on top of hyper armor you can finish entire spellcasts, combos, or weapon arts even while being flailed on. On a side note, that much poise is a huge investment, and I generally prefer to offhand a dagger or other light weapon with the "endure" ash of war, for those spicy spellcasts or weapon arts I really don't want interupted. It only lasts 3 seconds, but every cast time in the game is under that anyway unless you're channeling the meme beam.

Certain ash of war and attack animations also boosts your poise temporarily.

Palm Strike gives you hyper armor, even when having no armor.

51 is fine. Anything less will get you knocked around by a silent fart. I've played naked since Elden Ring start, and now I play with the thong. So I've grown accustomed to low poise. You don't need poise if you learn spacing and when you can and can't do certain animations, but 51 poise will help with most attacks in the game that aren't obviously massive hits.

Edit: If you want to go over 51 to cover even more hits in the game, go for 101.
