Sheath question

Katanas have an unsheathe attack, but to use it don't you need to have the weapon "sheathed" in the first place? Is it possible to sheathe weapons? Sometimes I would like to put away the sword or whatever and just walk without something in my hands.

Its an Ash of War, Unsheathe.

Regarding your question "sorta" weapons that arent currently in use, aka directly on at least one hand, will be sheathed, so you could technically sheath your weapon by two handing nothing, (aka your Off-Hand) it makes you look dumb unfortunately.

So the Ash of war unsheath will happen when you make a special attack, even if not "sheathed".

its like square off, you enter a stance, in this case sheathe the weapon to prepare for an attack
