The only other reason I can think of is, you put a lot of time into that character, and probably collected a lot of stuff. It can be annoying doing it all over again from scratch.
But just some ideas: some people love playing the main game bosses over again, collecting weapons you can only get 1x run to dual wield. discovering things you may have missed on the first run, completing quests you may have missed on the first run, making different decisions in quests to get different items (millicent's prosthetic vs rotted wing insignia), doing different paths through the game (you can reach Lyndell Royal Capital without ever stepping foot in Altus for example), getting unique items (Dung Eater puppet vs Nepheli puppet), trying out a different build using end game equipment (ie switching from str to faith and rocking a golden order greatsword instead of a giant crusher).
IMO the game has lots of replay-ability. I have 10 different characters (the max allowed) and have gone through the game 10+ times. If you would rather do something else, by all means.
Why post drivel plus like this?
If you think the game you just completed was good enough, stay on that difficulty.
If you think the game was too easy for you, try the next difficulty level.
Or don't.
