It is an intentional design decision. Unlike Baldur's Gate 3, where the designers went to great pains to be sure there were ways to progress in almost every situation, that is not the case in Elden Ring.
In Elden Ring, the designers intent seems to be to let the player do what they want, but will not prevent them from bricking a quest line or progression goal permanently. That's just the way the game is, so need to go with it.
I would probably start over as I would assume that not to much progress will be lost. Before you kill an NPC, be sure you know what the consequences will be and that you can live with them. Some are very serious indeed.
Good Luck
All of the NPCs that you can talk to are part of some storyline and generally have something you want... so try not to kill them.
Solution:
Unequip one of your gestures completely, leave it empty, and then click on it to fill it again, you will find the snap then.
Dont forget, you have to UNEQIP one of the slots completely empty.
