Are affinities scaling additive?
If I have a weapon that has "B" dex scaling and add a keen affinity with an ash of war, does it increase further to let's say a hidden "A" dex scaling?

You can actually see how the scalings get modified when you select an affinity.

Sometimes it stays at B, but you'll notice it's blue, so the scaling did actually increase.

And yeah, adding keen most def will increase the dex scaling.

Yes, adding Keen to good-scaling Dex weapons will just make them that much better. It's almost always a good idea to add some type of infusion to your weapon to increase the damage.

equally, If I'm running let's say a fth+str build and add a sacred affinity to golden halberd (which already scales with faith), will that make it much better?

Notably, there are a few weapons in the DLC that have split damage that gets better by infusing them with that damage. Fire Knights Greatsword, Black Steel Greathammer, etc.

If you give a weapon an elemental infusion, keep in mind that split scaling (multiple damage types) is usually a bad idea, particularly at the end of the game/in NG+. That's because instead of the damage fighting through one type of damage resistance, say physical, when the weapon has multiple damage types each type is reduced by the enemy resistances separately. Basically the 'attack damage' numbers shown are inflated. It's not always worse than single-scaling, but often the slightly higher base attack is not worth it in terms of actual damage.
