I was a banished knight halberd main so I mostly win trade against normal one since I have better range.
Now real talk, I think you can parry them on good latency, but the best way i've found to counter it is to take either a heavy weapon with hyper armor (mostly for invasions) or a fast and annoying weapon like shamshir for duels and just mash against them, play super aggro to they don't get a chance to start chasing you.
You need decent stamina, and stamina dmg reduction by 20% but you'll tank the whole thing and trade up 800 dmg or so.
There are a lot of great builds that discourage people from pressing buttons in Elden ring.
Even spells, a ranged weapon art, bows, throwing weapons, consumables.
All these things keep people honest.
I think easy mode might be claws of night?
They press a button you fast roll and throw daggers over and over?
do not try to parry r2 or jumping attacks, you cannot parry those
my build is init/str build, and both halberd and banished halberd don't deal much damage.

I guess cold affinity isn't good choice since they will wait until their cold stack get cured
make distance, I suppose. raksasha's what I use along with night claws just now.
